About the Role
We are seeking an exceptional Bar Manager to join the pre-opening team of Delano London. Reporting to the Director of Food & Beverage, you will take the lead on Rose Bar, shaping its beverage identity, service culture and atmosphere while playing a senior leadership role across the wider Food & Beverage operation, including Lana Lusa Restaurant, Room Service and the Private Dining Rooms. You will help create a bar that feels unmistakably Delano - sophisticated but never stiff, energetic and relevant to London's ever-evolving bar and nightlife scene.

Set to open in 2026, Delano London will fuse historic charm with contemporary luxury, offering a 67-key luxury retreat that blends soft minimalist design, generous living spaces and park views. This distinctive lifestyle destination will seamlessly converge design, dining, nightlife and wellbeing.

Key responsibilities include leading the day-to-day operation of Rose Bar, setting a polished, confident, warm and personality-filled service tone. You will act as a senior member of the Food & Beverage leadership team, maintaining a visible presence and supporting the Director across all outlets. You will shape and protect the Rose Bar identity, develop creative and commercially sound cocktail programmes and seasonal beverage menus, and keep a close pulse on London's bar scene to bring forward innovative ideas and collaborations.

You will recruit, onboard and develop the opening team, fostering strong technical knowledge, confident service and a culture where personality and genuine hospitality thrive. Managing beverage purchasing, cellar organisation, stock control, wastage and supplier relationships with discipline and attention to quality will be essential.

Driving beverage revenue, average spend, gross profit and labour productivity, you will balance creativity with strong commercial decision-making. You will own the guest journey from early evening through late-night service, maintaining energy, pace and standards as the mood evolves. Additionally, you will lead beverage experiences across all Food & Beverage outlets, lead tastings, supplier partnerships, brand activations and beverage innovation, and support pre-opening stock, equipment, systems, SOPs and training plans.

Ensuring full compliance with licensing, food safety, Health & Safety, company policies and legal requirements is critical. You will also support Manager on Duty responsibilities and collaborate across outlets to foster a one-team approach to Food & Beverage leadership.

Experience
Strong bar leadership experience at senior management level within luxury hotels, destination bars, premium restaurants or high-quality lifestyle operations. Previous pre-opening experience is highly desirable.

Excellent beverage knowledge with a strong understanding of cocktails, spirits and wine. Proven ability to manage revenue, gross profit, labour, stock, wastage, budgets and supplier relationships.

Comfortable with POS, inventory and rota systems, and knowledgeable about UK licensing, food safety and operational discipline behind successful bar management.

Qualifications
Relevant qualifications in hospitality or beverage management are advantageous but not explicitly required. A strong track record and demonstrated skills in bar leadership and operations are essential.
