We are seeking an exceptional Assistant Restaurant Manager to join the pre-opening team of Delano London. Reporting to the Restaurant Manager, you'll play a key role in launching and running Lana Lusa, our all-day restaurant, while supporting the wider Food & Beverage operation. You'll be highly visible on the floor, helping the team deliver warm, intuitive service from breakfast through dinner.

Key responsibilities include supporting the Restaurant Manager in day-to-day operations across breakfast, lunch and dinner; leading shifts from the floor by coordinating sections, pacing and team deployment; acting as a confident host to ensure a personal, polished and unmistakably Delano guest journey; coaching and developing the team in real time; supporting recruitment, onboarding and training of the opening team; working closely with Culinary on service flow, menu knowledge, allergies, pacing and communication; managing reservations, walk-ins, table allocation and guest requests; supporting rotas, briefings, opening and closing procedures, cash handling and operational administration; monitoring key operating indicators and identifying improvement opportunities; coordinating with Rose Bar, Room Service and Private Dining for a seamless hotel experience; handling complaints and service recovery; supporting VIP dining, events and hotel activations; and stepping across outlets as part of the wider Food & Beverage team.

Requirements

Experience
Strong restaurant supervisory or assistant management experience within a luxury hotel, premium restaurant or high-quality lifestyle operation. Previous pre-opening experience is a real plus, with comfort in building a team and operation from the ground up.

About you
A natural host with excellent floor presence and a strong understanding of the guest journey. Confident leading a team through busy services, balancing structure, pace and attention to detail. Good commercial awareness with understanding of labour, average spend, productivity and operational controls. Clear communicator who works well with Culinary and other hotel teams, solving problems calmly and quickly. Comfortable with POS, reservations and rota systems. Flexible to work breakfast, evenings, weekends and key hospitality moments.

Qualifications
