About the Role
As Back of House Manager, you will take ownership of Health & Safety across all Back of House areas, ensuring a clean, food-safe working environment through daily walkarounds and EHO-compliant cleaning checks with prompt follow-up on any actions. You will manage COSHH training and certification across all Food & Beverage departments, overseeing the ordering and storage of chemicals in line with legal and company requirements. Collaborating closely with chefs, you will manage the ordering of F&B products, ensuring accuracy and efficiency. You will be responsible for checking, signing off, storing, and rotating all deliveries according to stock control procedures. Managing refuse storage and removal in accordance with company standards and liaising with external contractors will also be part of your role.

You will oversee Kitchen Porter payroll administration through Fourth, including daily close-downs, rota forecasting, payroll preparation, and accurate recording of absences and holidays. Coordinating maintenance of all culinary areas, equipment, fixtures, and fittings is essential. You will work closely with the Finance team to ensure all paperwork is accurate and submitted on time.

Leading, motivating, and developing the Kitchen Porter team is a key responsibility, including implementing a weekly training focus and managing all shift cover requirements. You will ensure the team maintains the staff canteen, including cleanliness, stocking crockery and cutlery, and upkeep of the staff coffee machine. Weekly cleaning, pest control, and maintenance reports will be reviewed with Senior Chefs, Director of F&B, and Restaurant General Manager.

Managing labour costs in line with agreed budgets, producing monthly reports on Health & Safety, COSHH, and Risk Assessment training compliance, and maintaining kitchen due diligence records with readily available documentation are critical tasks. You will carry out stock takes, including monthly crockery inventories and breakage reporting, verify and sign off laundry counts, and conduct weekly checks and replenishment of first aid supplies.

Supporting Housekeeping in maintaining the cleanliness of the loading bay, including jet washing when required, and ensuring that both you and the Kitchen Porter team maintain company uniform and presentation standards complete your responsibilities.

Requirements

Experience
- Experience using stock systems and goods receiving systems
- Experience using kitchen equipment and recommended cleaning methods
- Experience leading and managing teams, leading by example to create a positive environment

- COSHH certification or COSHH trainer qualification is desirable but not essential
