About the Role
Reporting to the Restaurant General Manager, you will be their trusted second-in-command, leading the restaurant floor and supporting the day-to-day operation of Seabird to ensure every service is delivered to the highest standard. You will lead from the front during service, spending the majority of your time on the floor coaching the team, supporting guests and ensuring seamless execution from opening through to close. When the General Manager is away, you will take full ownership of the restaurant, maintaining operational, financial and guest experience standards.
You will support the Restaurant General Manager in delivering departmental objectives across service, people, financial performance and operational excellence. Leading, inspiring and developing the front of house team through regular coaching, training and performance conversations, you will create an engaged, accountable and high-performing culture.
Driving exceptional guest experiences by being present during service, you will proactively resolve issues, build relationships with regular guests and constantly seek opportunities to elevate the guest journey. You will also support recruitment, onboarding and succession planning to help develop future leaders within the business.
Your responsibilities will include labour deployment, rota planning, productivity and payroll administration, ensuring the business is appropriately resourced while maintaining labour efficiency. You will monitor operational standards, compliance and health & safety procedures, ensuring policies are consistently followed across every shift.
Working collaboratively with the Executive Chef, Bars Manager and wider hotel teams, you will help deliver one seamless guest experience across the property. You will also support stock management, ordering, reporting and departmental administration while developing a strong commercial understanding of the business.
Continuously identifying smarter ways of working, you will drive improvements in service, efficiency and operational performance without compromising the integrity of the Seabird brand.
Experience
Previous experience as an Assistant General Manager, Restaurant Manager or similar management role within a busy, premium hospitality environment is essential. Proven experience leading, motivating and developing large front of house teams, creating a positive culture built around accountability, engagement and continuous improvement is required. Strong operational knowledge with excellent organisational skills and the ability to manage multiple priorities whilst maintaining exceptional attention to detail is critical. Commercial awareness with a good understanding of labour management, payroll, productivity and operational performance is important. Experience with departmental P&L management is advantageous but not essential.

Qualifications
Relevant hospitality management qualifications are beneficial but not explicitly required. A strong commitment to personal and professional development is expected.
