Delano London, opening in late 2026 and overlooking Kensington Gardens, brings the spirit and heritage of the iconic Delano Miami Beach to London, reimagined for a new generation. The hotel will feature 67 rooms and suites, Lana Lusa, the legendary Rose Bar and Rose Lounge, alongside The Source wellness offering. We are seeking an exceptional Senior Breakfast Chef to join our pre-opening culinary team. Reporting to the Executive Head Chef and working closely with the Senior Sous Chef, you will take ownership of the breakfast operation and weekend brunch, creating a memorable and consistently excellent start to every guest’s day. You will lead by example, build a strong breakfast team and deliver food that combines precision, generosity, freshness and genuine hospitality.
Your responsibilities will include managing day-to-day breakfast and weekend brunch operations, ensuring excellent preparation, organisation and guest satisfaction. You will lead the breakfast kitchen team, maintain a calm and professional environment, and work closely with culinary leadership to develop a breakfast and brunch experience aligned with Delano and Lana Lusa concepts.
You will oversee the preparation and service of a high-quality breakfast offering including eggs, hot dishes, bakery and pastry items, cereals, fruits, healthy options and juices. Delivering an elevated weekend brunch experience with attention to food quality, presentation, timing, variety and consistency is key. You will manage mise en place, production lists, prep schedules and section readiness, coordinating with Front of House, Restaurant Management, Pastry, Stewarding and other departments to ensure smooth service.
Additional duties include coaching and developing the breakfast team, supporting recruitment and onboarding, creating and maintaining SOPs, recipes, cleaning schedules and service standards. You will monitor food quality, freshness, presentation, portion control, stock management, waste reduction and compliance with food safety, HACCP, allergen management and Health & Safety standards.
Supporting menu tastings, recipe development, activations, mock services and other pre-opening activities will be part of your role. Flexibility to assist other culinary sections when needed, while maintaining responsibility for breakfast and brunch, is expected.

Experience
Strong breakfast and brunch experience at Senior Chef de Partie, Junior Sous Chef, Sous Chef or Senior Breakfast Chef level within a high-quality restaurant, luxury hotel or premium hospitality operation. Previous luxury hotel or high-volume breakfast experience is highly advantageous. Pre-opening experience is a plus, with an understanding of preparation, systems and consistency.
Confident hands-on chef with excellent knowledge of breakfast production, cooking techniques, presentation, kitchen organisation and service delivery. Comfortable managing early starts, busy breakfast services, weekend brunch and fluctuating guest volumes.
Skilled in egg cookery, hot breakfast, buffet operations, fresh produce, sauces, garnishes and dietary adaptations.
