About the Role
As Pastry Sous Chef at Raffles London OWO, you will lead and manage the pastry kitchen operations, ensuring all food is produced and served to the highest Raffles standards while adhering to health and safety legislation. You will collaborate closely with all food and beverage outlet teams to deliver a luxurious and consistent service, managing time and service targets effectively. Your role includes training and mentoring junior staff, maintaining recipe standards, cost control, and stock management. You will be involved in menu development, recipe collation, and seasonal menu implementation, while upholding kitchen discipline and culture. Acting as a hands-on leader, you will support the team through coaching, regular appraisals, and troubleshooting guest challenges. You will also ensure compliance with health and safety procedures and promote a safe working environment. This role offers the opportunity to work within a prestigious, historic luxury hotel environment, contributing to exceptional culinary experiences and the advancement of the pastry kitchen operations.
Experience
Recent experience within a multi-outlet venue or 5-star hotel is essential. Market knowledge of competitors and event industry trends is required. Previous experience managing or supervising a team is desirable. Experience within a luxury hotel environment working with LQA, Forbes 5* or equivalent standards is an advantage.

Qualifications
