About the Role
We are looking for a Restaurant General Manager to join our team at The Hoxton, Southwark, leading the Seabird restaurant. Seabird offers panoramic views of London from the 14th floor and features a raw bar with London’s longest oyster list, serving sea-to-table dishes inspired by Portuguese and Spanish influences.

Reporting to the Director of Food & Beverage, you will be a visible, hands-on leader who spends the majority of your time on the restaurant floor, leading from the front, developing your team and delivering exceptional guest experiences while driving the commercial success of the business.

You will own the day-to-day operation of Seabird, balancing operational excellence with commercial performance and ensuring every service runs smoothly while continuously seeking ways to improve.

Lead, inspire and develop a large front of house team, creating a culture where people feel supported, challenged and empowered to deliver their best every day. Drive performance through coaching, regular feedback, recognition of great performance and holding high standards to create consistently brilliant guest experiences.

Take ownership of the restaurant’s commercial performance, with a strong understanding of P&L, labour, payroll and productivity. Use your commercial acumen to make informed decisions that deliver exceptional hospitality alongside strong business results.

Be obsessed with the guest journey, constantly looking for opportunities to elevate the experience, build loyalty and create memorable moments that keep guests returning.

Work collaboratively with the kitchen and wider hotel teams to deliver a seamless guest experience, building strong relationships across the business.

Create an environment where your team enjoys coming to work, developing future leaders while maintaining high engagement, accountability and operational standards.

Continuously seek smarter, more efficient ways of working without compromising on quality, service or the integrity of the Seabird brand.

Requirements

Experience
Previous experience as a Restaurant General Manager or in a similar senior restaurant leadership role within a busy, high-volume hospitality environment. Proven ability to lead, inspire and develop large front of house teams, creating a culture of empowerment, accountability and motivation.

Strong commercial understanding including P&L management, labour, payroll, productivity and operational performance.

Qualifications
Relevant hospitality management experience preferred. A passion for learning and development is essential. No specific formal qualifications required but a strong track record in restaurant leadership and commercial management is expected.
