About the Role
The Savoy is one of the world's most iconic hotels, renowned for its outstanding service excellence since opening in 1889. As Restaurant Manager within the Gallery all-day dining outlet, you will assist the Restaurant General Manager and lead a dedicated front-of-house team to deliver exceptional, memorable dining experiences. This hands-on leadership role involves overseeing daily operations, working closely with the kitchen, and supporting Assistant Managers and Supervisors to drive performance, engagement, and consistency. You will be accountable for ensuring seamless service delivery, upholding 5-star service standards, managing financial performance, and fostering strong interdepartmental relationships. Your leadership will be key to maintaining the highest standards of quality, guest satisfaction, and operational excellence in line with Fairmont and Savoy brand values.
Key Responsibilities
- Lead and direct all front-of-house operations within the Gallery
- Drive a culture of 5-star service excellence to exceed guest expectations
- Manage, coach, and develop a leadership team of 2 Assistant Managers and 2 Supervisors
- Monitor costs, drive revenue, and achieve departmental financial targets
- Implement and maintain Fairmont/Savoy service standards and SOPs
- Handle guest satisfaction and resolve complaints professionally
- Build strong relationships across departments for smooth operations
- Support strategic direction aligned with F&B objectives
- Oversee daily briefings and lead by example on the floor
- Ensure compliance with food hygiene, health & safety, and company policies
- Support budgeting, forecasting, and cost control initiatives
- Maintain clear communication within the team and across the hotel

Experience
- Proven experience as a Restaurant Manager or similar leadership role in a luxury or high-volume environment
- Strong understanding of 5-star service standards and guest expectations
- Demonstrated leadership skills managing and developing structured teams
- Excellent communication and interpersonal skills to inspire and motivate
- Strong organisational skills with ability to multitask and perform under pressure
- Commercial awareness with understanding of financial drivers in a restaurant setting

Qualifications
- Desirable: Strong food & beverage knowledge including current trends
- Desirable: Wine knowledge (WSET or equivalent advantageous)
- Experience with POS systems and restaurant booking platforms advantageous
- Experience managing large teams in a dynamic environment preferred
