About the Role
We are seeking a Chef de Partie who genuinely loves cooking from scratch to join the dedicated team at Lasdun Restaurant, a modern British restaurant located within the iconic walls of London’s National Theatre. In this exciting role, you will join a collaborative kitchen team that cures meats, ferments and pickles in-house, builds sauces from base ingredients, and works closely with fresh food suppliers to champion field-to-fork cooking.

Reporting to the Head Chef, you will be responsible for the day-to-day operations of your kitchen section, delivering consistently high standards of food and presentation. This role values proper scratch cooking with seasonal menus and creative input, supported by a Head Chef who invests in your development. Rotas are planned 2–3 weeks ahead and the kitchen is closed on Sundays.

Key responsibilities include running your own section during service, preparing, cooking, and plating dishes using fresh, high-quality ingredients—all made in-house. You will work closely with the Head Chef to execute seasonal menus and maintain quality control, taking pride in classic foundations such as stocks, sauces, ratios, curing, fermenting, and prep done properly. Supporting daily mise en place and maintaining par levels for smooth service are essential, as is collaborating with Front of House to deliver a seamless guest experience and confidently discussing ingredients when needed.

Championing food safety, cleanliness, and organisation is vital, including completing health and safety checks and end-of-service reporting. You will be part of a small, passionate brigade that values learning, consistency, and craft.

Requirements

Experience
Experience in cooking from scratch is essential, with a strong foundation in classic cooking techniques such as mother sauces, ratios, and prep methods. Experience in independent restaurants or quality gastropubs is a bonus.

You should have a positive, determined attitude and a desire to keep developing your skills. Curiosity about ingredients, provenance, and seasonal cooking is important, along with a detail-driven approach and pride in managing your section.
