As Executive Pastry Chef, you will lead and manage the pastry kitchen operations, ensuring all food is produced and served to Raffles’ standard of excellence while adhering to health and safety legislation. You will create, cost, and develop seasonal and on-trend pastry menus for all Raffles outlets, working closely with food and beverage teams to deliver a luxurious, high-quality service. You will provide training and mentorship to junior staff, supporting their development.

Your responsibilities include creating and updating department standards, maintaining kitchen culture, managing production and service, training and appraising the pastry team, maintaining stock control, and collaborating with front of house and beverage teams. You will lead menu development, cost control, and seasonal menu implementation while maintaining discipline and mentoring staff. Additional duties include involvement in hotel projects, ensuring correct storage and stock rotation, ordering supplies and equipment, and covering for senior staff as needed.

As a hands-on leader, you will coach and develop your team, attend management meetings, support troubleshooting, and promote creativity and innovation. You will ensure health and safety compliance, report hazards, and encourage awareness throughout the department.

Requirements

Experience
Recent experience within a multi-outlet venue or 5-star hotel is essential. Market knowledge of competitors and event industry trends is required. Strong food and beverage knowledge and a proven track record of delivering high levels of service under pressure are important. Experience managing or supervising a team is desirable, as is previous work within a luxury hotel environment adhering to LQA, Forbes 5* or equivalent standards.

You are enthusiastic and committed to delivering the best service and experiences possible. You have excellent communication and customer service skills, both written and spoken. You are detail-oriented, consistent, and able to work with and lead a team. Strong time management skills and the ability to multi-task while maintaining a professional appearance are essential. You understand and are willing to contribute to a 24-hour operational schedule when required. A passion for hospitality and an understanding of the ultra-high-net-worth (UHNW) customer and the luxury sector are desirable.
