About the Role
Your role will be responsible for leading and managing the kitchen operations at Raffles London at The OWO. You will develop standards and ensure all food is produced and served in line with health and safety legislation. You will create, cost, and develop seasonal and on-trend menus for all Raffles outlets, working closely with food and beverage teams to deliver a luxurious and high-quality service. You will provide training and mentorship to junior staff, assist with their development, and maintain smooth kitchen operations across multiple outlets within this iconic Grade II* listed Edwardian building.

Responsibilities include creating and updating department standards, maintaining kitchen culture and engagement, managing all kitchen production and service, training and appraising staff, maintaining stock control, menu engineering, cost control, and ensuring compliance with health and safety standards. You will also lead projects for hotel advancement, manage equipment maintenance, and provide leadership and support during the absence of senior management.

As a hands-on leader, you will coach and develop your team, attend management meetings, resolve guest challenges, and promote creativity and innovation within the kitchen. You will ensure composure under pressure and uphold the highest standards of service and safety.

Requirements

Experience
- Recent experience within a multi-outlet venue or 5-star hotel
- Strong food and beverage knowledge
- Market knowledge of competitors and event industry trends
- Proven ability to provide high levels of service under pressure
- Exceptional communication and customer service skills, both written and spoken
- Strong time management skills with the ability to multi-task
- Understanding and willingness to contribute to a 24-hour operational schedule when required

Qualifications
Essential
- Recent relevant experience as above

Desirable
- Previous experience managing or supervising a team
- Understanding of the luxury sector and UHNW customer expectations
- Experience within a luxury hotel environment working with LQA, Forbes 5* or equivalent standards
- Passion for hospitality
